Yogurt Pancakes

About two years ago I happened to have an excess of plain Greek yogurts. Neither me nor my kids are fan of plain yogurt. I decided to try to make pancakes. After few tries, I wrote it down and got a new yogurt pancakes recipe. My kids love them!

I also tried flavored yogurt. That’s good too, but you’ll taste that flavor anyway. So my favorite yogurt for this recipe is just plain one.

Ingredients:

  • 12 oz (350 g) yogurt (Greek yogurt)
  • 1 egg
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp vinegar
  • 3/4 cup flour

Directions:

  1. Mix yogurt, egg, and salt.
  2. Mix the baking soda with vinegar, then pour into the yogurt mixture quickly.
  3. Add the flour; mix well.
  4. Using a spoon, put the batter in the preheated pan with oil.
  5. Bake the pancakes on both sides until golden brown, on low to medium heat. Total baking time should be between 5-7 minutes.
  6. Serve hot with sour cream if desired. Some kids like it with maple syrup which is also really good.  Enjoy!
